Yes it is a chicken, but I think the Coens framed up the shot to get the silhouette of an abstract "bird in descent," as if the Holy Spirit is part of their group. I am sure Cinematographer Roger Deakins and the Coen Bros noticed the way the wings splayed out and made sure to capture it. Thanks for the link!
